So, let’s talk dessert. This Ritz Cracker Pie is loaded with yummy flavors and packed with history. This was my Grandpa’s favorite pie. When I was younger I remember making this pie with my Grandma. This recipe is SO old, one of the ingredients was Dairy Whip!
I had no idea what Dairy Whip was, so I had to ask my mom. Apparently years before Cool Whip was invented you had to mix a dry powder with cream. Let’s just say how thankful I am for the updated times!
This Ritz Cracker Pie recipe is like pecan pie, but only better!
List of ingredients:
- 25 Ritz Crackers
- 3 egg whites
- 1/2 cup pecans
- 1 cup sugar
- 1 tsp baking powder
- 1 tsp vanilla
- 1 tub of cool whip
Crush the crackers with your hands into a large bowl. Then add the pecans, sugar, baking powder and vanilla. Beat the eggs whites until stiff and add to the bowl. Mix altogether. Pour the mixture into a greased 9″ pie pan. Bake at 325 degrees for 25-30 minutes. After the pie has cooled add 1 tub of cool whip to the top of the pie.
Step 1: Crush 25 Ritz crackers with your hands into a large mixing bowl. This was about one sleeve of crackers.
Step 2: Add 1/2 cup chopped pecans, 1 cup sugar, 1 tsp baking powder and 1 tsp vanilla into the large mixing bowl with the crackers.
Step 3: Using either a hand or stand mixer, beat 3 eggs on high until still peaks form.
Step 4: Carefully fold the egg whites into the dry ingredients. Be careful not to deflate. Then pour the mixture into a greased 9″ round pan pan.
Step 5: Bake at 350 degrees for 25-30 minutes or until a knife is clean when you insert it into the center of the pie.
Step 6: After the pie has cooled, add a whole tub of Cool Whip on top of the pie.
Serve with a hot cup of coffee or tea! Enjoy the sweet life with wonderful family and friends!
